Roasted Beetroot & Blood Orange Salad 

ingredients

1 blood orange, peeled and cut into segments 
1 large beetroot, roasted 
2 large handfuls baby spinach or rocket leaves 
50g feta cheese 
30g crushed walnuts 

Dressing 
Reserve juice from orange when cutting 
1 Tbsp extra virgin olive oil  
1/2 Tbsp balsamic vinegar
1/2 small lemon, juiced 
1 teaspoon honey
