1 fennel bulb
ΒΌ head chinese cabbage
1 apple
2 sprigs of fennel leaves, chopped
50g feta cheese
30g walnuts, crushed
Dressing:
1 lemon, juiced
2 tablespoons of extra virgin olive oil
Salt and pepper, to season
1. Thinly slice cabbage, fennel bulbs & apple and add to a salad bowl. If you have a mandolin this will help give you a very fine slice.
2. To make dressing, combine ingredients in a bowl and whisk together well to combine and form a vinaigrette. Add to salad and toss to combine.
3. Serve topped with chopped fennel leaves, crumbled feta and crushed walnuts.
