1. Preheat oven to 200°C. In a baking tray add chopped fennel, whole garlic cloves, tomatoes, capers and thyme leaves. Drizzle with olive oil and season with salt & pepper.
2. Bake for 50-60 minutes until fennel is tender and golden.
3. Serve alongside your favourite protein, this is delicious alongside baked white fish.
2 fennel bulbs, cut into quarters
250g cocktail truss tomatoes or 1 punnet cherry tomatoes
1 tablespoon capers
2 sprigs of thyme leaves
2 garlic cloves
2 tablespoons extra virgin olive oil
Salt and pepper to season
