Gut Healthy Potato Salad

1. Chop potatoes into 4-6 pieces. Boil for ~10 minutes until soft. Set aside to cool. 
2. Boil snow peas for ~2 minutes, until tender. Quickly drain and refresh in iced water to cool. Drain and set aside. 
3. Combine lemon, oil, dijon mustard in a small jar. Season with salt and pepper. Shake well to combine. 
4. Combine all ingredients and toss together to combine. 
5. Enjoy served along side your favorite protein, I love this with grilled salmon! 

5 medium potatoes
150g snow peas 
1/4 small red onion, thinly sliced 
1 tablespoon capers 
2 tablespoons fresh dill, chopped 
1 lemon, juiced  
1 teaspoon dijon mustard 
2 tablespoons extra virgin olive oil 
1 tablespoon feta (I like to use Meredith Dairy goats feta because it is oh so tasty!)
