Salmon Soba Noodle Salad

- 4 fillets of salmon, skin on
- 180g soba noodles (2/3 packet)
- 1/4 head of cabbage, thinly sliced
- 200g snow peas
- 1 medium carrot, peeled into ribbons
- 1 medium cucumber, thinly sliced  
- 1 avocado, sliced 
- 2 radish, thinly sliced 

Dressing
- 1 lime, juiced
- 2 tablespoons soy sauce 
- 1 teaspoon sesame oil 
- 1 tablespoon rice wine vinegar 
- 1 teaspoon maple syrup

1. Add sliced cabbage, carrot, cucumber, radish to a large salad bowl. 

2. Add snow peas to a pot of boiling water and boil for 2 minutes until soft. Remove from heat drain and cool under cold water. Thinly slice. 

3. Cook soba noodles in a pot of boiling water for 4 minutes until tender. Drain and rinse under cold water to cool. Add to salad with snow peas. 

4. Mix together lime juice, sesame oil, rice wine vinegar and maple syrup and pour over salad. Toss to combine.

5. Grill salmon fillets in extra virgin olive oil over medium heat for 3-4 minutes each side until cooked to your liking
